Popsicles on a hot day... kid friendly g-free treat


Josh had put some Popsicle molds on the kitchen counter for me last night that he found. I bought them a year or two ago and I've only used them once or twice. When Jude spotted them this morning he got so excited! There was a lot of jumping up and down in the kitchen. :) He scooted a chair over to the counter and helped me make a smoothie that we could pour into the molds.

We got out the blender and mixed:

1 cup of frozen strawberries* (read below)
A generous scoop of orange juice concentrate (about 1/8 cup)
2 tbs sugar
1/3 cup - 1/2 cup almond milk

Normally we use banana and honey, but I was unsure how it would all freeze, so I just went with what seemed like it would make a good mix.

Jude checked the freezer about a dozen times in the first 5 minutes the popsicles were in the freezer to see if they were ready to eat yet. :) (Excuse his half dressed outfit at that moment. lol)


The popsicles were ready this afternoon and the kids loved them!




Quick side note: *we've heard from friends and I've read on a few websites that some strawberries can be grown in wheat straw or sprayed with pesticides that could have gluten. Some people that are more gluten sensitive have reactions, just a head's up. We've been careful to pick from farms that are no-spray and we know how their berries are grown. Also, if you're wondering why we don't just buy popsicles, the ingredients "natural flavors" and "food coloring" are often places where gluten can hide, so we do our best to just avoid those things altogether. I'm sure there are safe popsicles at places like Whole Foods, etc., but there's a definite $avings in making your own too. :)
