Pizza!

We make almost everything from scratch, using carefully selected ingredients to avoid cross contamination (getting any traces of gluten in our diet). I've been trying to find some new quick and easy recipes to mix into our menu. We eat a lot of rice, salmon, veggie soups, etc., so trying pizza was something new for us on our g-free diet! And it sounded so exciting and indulgent! :) We made them Sunday night because we knew it would be an easy dinner after a long weekend. We've recently discovered Udi's bread, (at Whole Food's or Lamb's Thriftway) so we thought we'd try their pizza crust too. I'm glad we did, because I really liked it! Our checker at Whole Food's, who has celiac disease, said that she actually has one other pizza crust that is her favorite... I'll have to post that when I remember what it was. :)

We had a small jar of home-made pizza sauce (g-free) that my mom's husband Wayne made and gave us. It was great!! Because Josh and Jude can't eat dairy (hopefully after being tested next year their allergy will be gone!) we threw some cashews in the food processor and sprinkled those all over the sauce to give it a fatty/rich taste that cheese has. We then sprinkled on some pressed garlic and freshly chopped basil, broccoli, goat cheese, and pineapple. Baked it at 400 degrees for 10 min. It was delicious!! We made two pizzas, since the pizza doughs come two to a package and they are small.

Quick easy dinner served with fresh strawberries and salad!
