Granola!

My friend Amber (and fellow photographer), emailed me her family's granola recipe a few months ago.

It took me a few months to find a day to make it, and that day came around recently! I was in the thick of editing pictures and just needed a break from my computer and Josh was baking cookies, so I thought I'd join him in the kitchen and try out Amber's granola recipe! Wow, we wish we had made it sooner! It's wonderful! The only thing in her recipe that we changed was the oil. We used coconut oil because it's all we had on hand, but we really liked it!


This was her recipe email to me:

Vanilla Almond Granola: 

4 cups oats
1 cup chopped almonds
1/4 cup ground flax seeds
3/4 tsp salt
1/4 cup maple syrup
1/4-1/2 cup honey (depending on how sweet you want it.  We've made it with just the maple syrup before, but it didn't have the same consistency without the honey)
1/2 cup oil (I always use safflower oil) - { Our family used coconut oil here }
1/2 TBL vanilla
1/2 TBL cinnamon 

Mix well in a bowl.  Spread evenly on a baking sheet and cook for 20 min @ 350.  Stir once halfway through.  (Sometimes I pull it out sooner so that it's extra chewy... I like chewier granola, but some of the other more opinionated members of my family like it crunchy.  =)
