The gfcf lifestyle can certainly become more routine for us. I know that the level of gfcf each person takes with their diet varies. Some people are way more sensitive than others.

Jude is clearly the most sensitive person in our family. There are certain foods that he will avoid and I sometimes wonder if he knows they make him feel bad so he avoids them on his own. I feel like we kind of eat a lot of the same stuff over and over, just made in different ways. :) But it keeps Jude's diet clean. It seems that any time we deviate a little we run into trouble.
I'll go ahead and list our main foods:
- Fruits, all organic or no-spray (Apples, bananas, oranges, blueberries, grapes, pomegranates, strawberry-banana-blueberry smoothies with honey and a little rice milk ... if I add less rice milk it then becomes "ice cream" to my kids.) These are the main fruits my kids will eat, even though I buy more variety than this. :)
- Veggies, all organic (potatoes, sweet potatoes... we make a lot of potato fries with just olive oil and sea salt and baking them until golden brown... chard, kale, celery, peas, green beans, carrots, onions, avocado, broccoli is my kids' favorite, and we will only occasionally have corn since its in the chips we eat and also in the quinoa pasta we eat.)
- Ancient Harvest noodles and quinoa (we buy in crazy bulk and have delivered to our house)
- Rudi's bread & Happy Camper's Bread
- Lundberg's brown rice that I buy in 25 lb bags I believe, and grind into rice cereal (with the vitamix blender). We have rice cereal for breakfast a lot (and I sometimes mix it with a little gluten free oats that we order straight from the company and have delivered in bulk too). I put coconut and real maple syrup (we use kirkland brand real syrup) on mine. Yum.
- We buys a 1/4 organic cow each year and I buy organic chicken from New Season's Market.
- We eat Cabo Loco corn chips from New Season's. They seem to be the only chip Jude can eat without a reaction. (Although, we try to only buy them every once in a while).
- We buy the kids Glutino's gluten free pretzels occasionally.
- We drink almond milk and rice milk. We buy both, but I also love to make my own in the vitamix.
- We buy fresh wild salmon at New Season's or from a friend who gets it straight off the dock at the coast. And I usually serve it with either quiona, rice, and veggies.
- We buy beans from a guy who triple washes them, called Red Canary Beans.
- We have some things in our pantry like Maranatha almond butter and organic strawberry jam from costco, but Jude hasn't had either in a while, so I don't know about them for certain anymore, as far as Jude's sensitivity is concerned.
- Corn torillas occasionally.
- Newman's spaghetti sauce
- Eggs
- Emerald Valley Salsa
- Earth Balance Butter
- Rice Dream chocolate chips (use to be sunspire company)
- Almonds and almond flour
- Coconut flour
- We'll occasionally have juice (as long as it's 100% juice with no "natural flavors") but Jude prefers to drink water 95% of the time.
I'm sure there are a bunch of things I've totally forgotten (like those 100% fruit leathers we let the kids have, etc.), but for the most part these are our main staples. From these staples I make:
Soups
Mexican meals that are dairy free, and Rice & beans with chips, salsa and avocado
Spaghetti with salads or veggies
Hamburgers with Rudi's buns
Sandwiches
Salmon
Steak
Chicken
Potato fries
Quiche with a potato slices crust and no dairy
Meatloaf
Salads
Taco salad
French Toast
Pancakes (we still use Elana's Pantry website a lot for fun baking like cupcakes and brownies! And Josh still loves to tweak regular recipes and turn them into gluten free recipes!) www.elanaspantry.com
... the list goes on I guess! You can make a ton of different things from these items!
(Sorry this is a horrible photo, but it gives an idea. This was what we made when on vacation on Bainbridge Island. I took salmon, avocado, quinoa, chard and broccoli for one dinner. I baked the salmon with sea salt, pepper, and buttered Rudi's bread crumbs on top. Yum!)

It may seem really limited to some people, but I have friends that are on a much stricter diet than us, so I'm sure this seems lavish to them. :)

We've found that we can eat at the Hawthorne Fish House (or Corbett Fish House) since their place is GF and Jude and Josh don't have reactions! Josh and I have eaten at PF Changs and he's been fine. We've never taken Jude there. And we can have Mississippi Pizza in North Portland without a reaction! They are super careful. Anyway, we feel really fortunate to be able to eat out at all. It's nice every once an a while to have that liberty.
Anyway, that's just a little glimpse into where we are. I'm thankful for it and the health we're experiencing.
p.s. We've also been working on some gut health/repair and have been giving the kids daily probiotics, multi-vitamins, and also some cod liver oil hidden in smoothies and vitamin-B12 for brain health. :) We also landed on home school this year for Jude's education, since we were having so many problems with preschool use of wheat pasta for craft projects, playdough, etc. So we're doing a kindergarten curriculum for both kids.
